What are designations of origin?
You've surely heard the terms "Jabugo ham," "Santoña anchovies," or "Montilla-Moriles wine," as Protected Designations of Origin (PDOs) are very well known. As the Royal Spanish Academy states, they are a distinctive geographical sign used to identify those agri-food products whose quality owes its unique character to a specific region.
